Choc Banana Cheesecake Recipe
We all love cheesecake.... we all love bananas.... and we all love chocolate!!! Who doesn't!
So when Tracey recently tempted the staff at Mt Barney Lodge with a combination of the above, it instantly become a staff favorite!
It is so simple to make!
ANZAC biscut base
¾ cup plain flour
½ cup brown sugar
1 cup rolled oats
1 cup desiccated coconut
½ teaspoon salt
1 tbls golden syrup
2/3 tsp bicarb soda
250 dark chocolate
400g cream cheese (philly)
120g brown sugar
100 g whole almonds
Icing sugar to dust
Line 21 cm tin with baking paper
Mix dry ingredients in a bowl, add melted butter and mix.
Press mixture evenly to inside base of tin.
Bake in moderate to hot oven for 10 – 12 mins until crisp.
Bake unpeeled bananas till soft and roast almonds in oven at the same time.
Peel bananas when cool.
Melt chocolate in double boiler.
Puree cool bananas with cream cheese in food processor. Add sugar and continue to puree till smooth. Stir in melted chocolate until blended and smooth.
Refrigerate for a minimum of 4 hours. Serve with roasted almonds and sprinkle with icing sugar.
